A major effort is underway to help raise the standard of the culinary industry in Barbados.
The breakthrough concept, which involves an In-the-City dining series, is being spearheaded by Barbadian chef and mixologist Thaddeus Sealy.
From the kitchen at Jamoon Villa, Sandy Lane Estate, he told the Business Report it includes bespoke dining and the use of local fruits such as sea grapes, dunks and ackees.
The Canadian-trained chef says courses are in place for beginners which should pave the way for them to enter the hospitality industry.
